Color Changing Lemonade With Cold Foam

Ingredients
Butterfly Pea Tea
- 3 Butterfly Pea Flowers
- 1 Cup Water
Lemon Simple Syrup
- ¼ Cup Sugar
- ¼ Cup Water
- ⅓ Cup Lemon Juice
Cold Foam
- ½ Cup Milk
- 5 Drops Red Food Coloring
- ¼ Teaspoon Cake Batter Flavor
Instructions
Make Butterfly Pea Tea
- Heat 8 ounces of water and place butterfly pea flowers in the water. Let sit at least 5 minutes, longer if you want a deeper blue color.3 Butterfly Pea Flowers, 1 Cup Water
Make Cold Foam
- Using the Instant milk frother, add milk, food coloring & flavoring. Gently mix, and set frother to the "cold" setting.½ Cup Milk, 5 Drops Red Food Coloring, ¼ Teaspoon Cake Batter Flavor
Make Lemon Simple Syrup
- In a small sauce pan on the stove, mix water, lemon juice & sugar together. Heat until sugar is dissolved.¼ Cup Sugar, ¼ Cup Water, ⅓ Cup Lemon Juice
Assemble The Drink
- Fill glass with ice and pour in butterfly pea tea.
- Add the lemon simple syrup – this will change the color from blue to pink.
- Top with the cold foam. I recommend gently scooping the foam out to ensure you only get foam, and not milk. This just makes the drink look pretty vs having milk in the drink.

Why I Love This Recipe
The main reason I love this color changing lemonade – is just that – it changes colors! What a fun way to make a drink. I don’t know many drinks that get their color from natural ingredients. You can grow your own butterfly pea flowers, I’m planning on growing them in 2022!
Butterfly pea flowers are naturally a beautiful dark blue color. As a matter of fact, for years, these flowers have been used to add color to teas, rice, and desserts. The flowers themselves are also edible, so you can eat them after you make this recipe, if you choose. I’d recommend letting the flowers float in the drink for an added pop of color.
When you add an acid – like lemon or lime juice – to the butterfly pea tea, a reaction occurs, and the color changes!
What Does The Color Changing Lemonade Taste Like?
After you brew the butterfly pea tea the flavor is very plain – I actually don’t taste anything. However, if I eat the flower itself, it is very bland – a slight hint of some flavor, but bland. I’ve learned that edible flowers are really made for show as all of the edible flowers I’ve tried have had no flavor.
I recommend mixing your lemon simple syrup as lemon-y as you can handle. Remember, you are watering it down with the butterfly pea tea. With all recipes, taste as you go, and know you can always add in more lemon later.
This color changing lemonade tastes like any other lemonade since the butterfly pea has no flavor. To boost up the flavor, I highly recommend adding the cold frothed milk. Frothed milk allowed me to add a new flavor layer (I used cake flavor). Having an ice cold lemonade with a cold foam on top transported me to a beach even though it’s cold outside.
