Black Bean Burgers

Ingredients
- 11 ounces Canned White Shoepeg Corn can sub for regular canned corn
- 15 ounces Canned Black Beans drained
- ¼ cup Tomatoes diced
- 1 each Chipotle Pepper In Adobo
- ¾ cup Panko Bread Crumbs
- 1 each Large Egg White
- ¼ cup Chickpea Flour up to 3/4 cup
Optional
- 1 tablespoon Your Super Magic Mushroom Mix
- 1 teaspoon Your Super Golden Mellow Mix
Instructions
- To your food processor add: 1/2 black beans, 1/2 corn & chipotle pepper. Pulse until almost smooth.11 ounces Canned White Shoepeg Corn, 15 ounces Canned Black Beans, 1 each Chipotle Pepper In Adobo
- In a large bowl, add your processed mix and all remaining ingredients. Mix well, and add more chickpea flour if the mixture is too wet. The mixture should hold a shape when pressed together.11 ounces Canned White Shoepeg Corn, 15 ounces Canned Black Beans, ¼ cup Tomatoes, ¾ cup Panko Bread Crumbs, 1 each Large Egg White, ¼ cup Chickpea Flour, 1 tablespoon Your Super Magic Mushroom Mix, 1 teaspoon Your Super Golden Mellow Mix
- Heat a frying pan over medium heat and spray with non-stick spray. Shape mixture into patties, and cook for 4-5 minutes on each side.
- Burgers are done when both sides are golden brown and firm. Top burgers with your favorite toppings.

- Alternatives for panko/chickpea flour: regular bread crumbs or 2 full eggs instead of just 1 egg white
- Looking for additional flavor? Add 2T BBQ sauce or ketchup, garlic, cumin or diced green pepper.
- Go bunless! Enjoy these black bean burgers on a lettuce wrap, tortilla or as a salad.
- The Your Super products are optional, but the magic mushroom will add a depth of flavor and the golden mellow will add additional spice.
Why I Love This Recipe
When I created my excellent veggie burgers recipe I wanted a burger that wouldn’t fall apart. I’ve grown used to buying black bean burgers from the freezer section, but wanted to make my own. These patties hold together beautifully, are full of flavor, and can be frozen.
In addition to the above, having the ability to add my own toppings to the burger is awesome. My black bean burger patties pair great with mayo, mustard and ketchup. I don’t usually eat hamburger buns, and these are great on lettuce leaf buns, tortillas or with no bun at all!
Freezing Excellent Veggie Burgers
If you make too many black bean burgers, no need to worry! Simply allow the patties to cool and place in the freezer.
I recommend freezing with parchment paper in between each layer of patties. As well as storing in either a freezer zip lock bag or using a vacuum sealer.
Using Frozen Black Bean Burgers
When you are ready to use the patties, place them on a microwave safe plate and microwave. Microwaving for 3 minutes, and flipping half way works well for me. Touch the burger, and if it’s not quite warm enough, microwave in 15-30 second intervals until they are warm.
Serve with your favorite toppings. I like ketchup, mayo & mustard on mine, yours can be uniquely yours by making it your own. When coupled with cheese I get a yummy cheeseburger, I’m sure these burgers would be great with pickles & onions as well. Last time I made these I served them on a tortilla under a bed of spinach. What a great way to get my veggies in for the day.
