Microwave Cinnamon Rolls
Ingredients
Dough
- 4 Tablespoons Almond Flour
- 2 Tablespoons Coconut Milk
- ½ Teaspoon Baking Powder
- ½ Teaspoon Coconut sugar
- 1 pinch Cinnamon
- 1 pinch Salt
Cinnamon & Sugar Filling
- 1 Tablespoons Maple Syrup
- 2 Teaspoons Coconut sugar
- 1 pinch Cinnamon
- 1 pinch Salt
Sweet Tahini Topping
- ½ Tablespoon Tahini
- 1 Teaspoon Lemon Juice
- 1 Teaspoon Maple Syrup
- 1 Teaspoon Water
Instructions
Dough
- Mix all dough ingredients together. Let rest while you make the remaining components.4 Tablespoons Almond Flour, 2 Tablespoons Coconut Milk, ½ Teaspoon Baking Powder, ½ Teaspoon Coconut sugar, 1 pinch Cinnamon, 1 pinch Salt
Cinnamon & Sugar Filling
- Mix all ingredients for the cinnamon & sugar filling together and set aside.1 Tablespoons Maple Syrup, 1 pinch Cinnamon, 1 pinch Salt, 2 Teaspoons Coconut sugar
Sweet Tahini Topping
- Mix all sweet tahini topping ingredients together and set aside.½ Tablespoon Tahini, 1 Teaspoon Lemon Juice, 1 Teaspoon Water, 1 Teaspoon Maple Syrup
Assemble The Cinnamon Rolls
- Press out the dough into a square. Spread cinnamon & sugar filling on dough.
- Cut dough into strips, depending on how large of a square you have, you may get 3-4 strips.
- Roll strips into mini cinnamon rolls and place them onto a microwave-safe plate. Be sure the rolls are placed with the "swirl" facing up, not laying on their sides.
- Microwave for 45 seconds, check for doneness, and if still doughy, microwave an additional 15 seconds. Heat in 15 second increments if not done.
- Finish with the sweet tahini topping and enjoy!

- If you’d like a more traditional cinnamon roll glaze, substitute tahini with powdered sugar. You may need to add additional water to thin it out.
- Skip cutting into strips for 1 large roll. Note that a single large roll will cook best in a bowl or mug.
- Substitute All Purpose Flour if you don’t have almond flour.
Why I Love This Recipe
First, these are microwave cinnamon rolls, what’s not to love? All things considered, these are a wonderful alternative to making regular cinnamon rolls. Save time, effort & energy by making microwave cinnamon rolls next time you have a sweet tooth.
Second, these rolls can be made with ingredients that you have on hand, and you don’t need yeast! In addition, if you want to use traditional ingredients like sugar or all purpose flour, this recipe can easily be adapted.
Finally, when I think about why I love microwave cinnamon rolls, they are just as yummy as traditional rolls. Having the option to make these into 1 large roll is also a plus, I do that when I really don’t want to share.
Tips For Making Microwave Cinnamon Rolls
Generally speaking these rolls are very easy to make, but there are a few tips that will help when making these.
I recommend making all 3 parts of the recipe before assembling. If you make the dough first, then the filling and finally the topping, that will allow the dough time to rest.
When you are ready to assemble the rolls, my #1 trick is to cut the filling topped dough into strips before rolling. By doing this, you have less risk of the filling coming out of the sides of the rolls.
Finally, check the rolls as the cook. One minute goes by very quickly in the microwave, and you don’t want an over cooked roll. If you check the rolls at 45 seconds, you can see how done the dough is and decide if you need more time. When the dough is cooked, it won’t be sticky, and won’t be hard either. The dough should be firm but soft. You will know if the dough was overcooked because it will be a little hard.
