Gluten-Free Vegan Bread
Equipment
- 1 Loaf Pan
Ingredients
- 1½ Cups Rolled Oats
- ½ Cup Pumpkin Seeds
- ½ Cup Sunflower Seeds, unslated
- 20 Pieces Cashew Clusters with Almonds & Pumpkin Seeds smashed into small pieces, see subs in notes
- 2 Tablespoons Sesame Seeds
- ¼ Cup Flax Seeds
- 3 Tablespoons Psyllium Husk Powder
- 1½ Teaspoons Salt
- 2 Tablespoons Maple Syrup
- 3 Tablespoons Coconut Oil, Melted
- 1½ Cup Water
Instructions
- Mix all dry ingredients in a large bowl.1½ Cups Rolled Oats, ½ Cup Pumpkin Seeds, ½ Cup Sunflower Seeds, unslated, 20 Pieces Cashew Clusters with Almonds & Pumpkin Seeds, 2 Tablespoons Sesame Seeds, ¼ Cup Flax Seeds, 3 Tablespoons Psyllium Husk Powder, 1½ Teaspoons Salt
- Mix all wet ingredients in a separate small bowl.2 Tablespoons Maple Syrup, 3 Tablespoons Coconut Oil, Melted, 1½ Cup Water
- To your dry ingredients, add the wet ingredients and stir well. If the dough is too thick, thin using water until you can mix it.
- Line a loaf pan with parchment paper and spray with cooking spray.
- Place dough into loaf pan and allow to sit for at least 2 hours.
- After the dough sets, preheat oven to 375°.
- Bake 1 hour, then allow to completely cool in the pan before removing and slicing.

- If you don’t have the clusters, sub for 1/4 cup of cashews, 2 T almonds & 1 T seeds of choice – pulse these into pieces

Quick Super Green Mayo
- 1-2 Tablespoons Vegan Mayo
- 2 teaspoons Super Green
Mix the 2 ingredients together. Will be dark green, top healthy seed bread with this super green mayo and you’ll never want to go back to avocado toast again.
