  • Line a sheet pan with parchment paper.
  • To a 2 cup measuring cup, add coconut oil and melt. You need 1/4 cup melted coconut oil.
  • Once melted, add in plant collagen and mix well.
  • Pour melted mixture onto prepared sheet pan. Allow to spread out naturally.
  • Add toppings sparingly, then allow to set. Speed up the setting time by placing the pan in the freezer.

If you know me, you know I love sweets – this sweet vanilla vegan bark is no exception! With just 3 ingredients and optional toppings, I can make a treat I can feel good about eating.

A few weeks back I shared a chocolate version of this recipe – I love how the base is so customizable. While the chocolate version was nice, I think I prefer the vanilla version. Mainly due to the eye appeal of the bark. The vanilla color allows the colorful flowers on top to really stand out.
