Super Green Bars

Ingredients
- ¾ Cup Cashews or other nut
- ¾ Cup Pitted Medjool Dates
- ¼ Cup Rolled Oats
- ¼ Cup Shredded Coconut
- 2 Teaspoons Your Super Super Green Mix
- 1 Cup Water or less
Instructions
- Place dates in a bowl or cup and add warm water until they are covered. Allow it to sit for at least 10 minutes to help soften the dates.¾ Cup Pitted Medjool Dates, 1 Cup Water
- Drain water, save for another use if you'd like.
- Place all ingredients (including dates) in a food processor, and process until sticky. The dough should be sticky but should come off your fingers easily. If the dough is too sticky, add more coconut or oats.¾ Cup Cashews, ¼ Cup Rolled Oats, ¼ Cup Shredded Coconut, 2 Teaspoons Your Super Super Green Mix
- Press dough into granola bar mold. Really press them into the mold – that will help keep these bars together!
- Place granola bars in the fridge for at least 2 hours. Store in a bag in the fridge. Bars should come out of molds and hold together.If bars fall apart, place them back in the food processor and add more dates, or enjoy the crumbled bars on other desserts.

- Switch out the dates with raisins – I enjoy golden raisins!
- If you don’t like coconut, leave it out and replace it with more oats.

Why I Love These Super Green Bars
These super green bars are packed full of all-natural ingredients. With 6 grams of protein and 5 grams of fiber per bar, these are sure to fill you up! Being able to enjoy these bars “on the go” is great too. I like to eat these either as a snack (half a bar) or a meal (full bar).
By adding in dates, these bars are perfectly sweet! The dates are what really hold these bars together. I’m a big fan of all the ingredients in this recipe. In today’s post, I’ll share other ideas for bars as well as an alternative to these bars if you are short on time.
Other Bar Options
There may be ingredients you don’t enjoy in these bars, or you may be wondering what other bars you could make. Here are some ideas:
Ingredients To Try:
- Sub dates for raisins
- Replace coconut flakes with oatmeal
- Add lime zest for a tangy flavor
- Try different nuts – hazelnuts, walnuts, or pecans
- Skip the nuts altogether and use seeds instead! Sunflower or pumpkin seeds would be great. Note that you may need more dates.
In addition to the above, you can make an entirely different flavor bar by using any of the Your Super mixes in place of Super Green! The only mixes I wouldn’t use in these bars are the protein mixes – those tend to be very gritty to me, and I don’t think they would be great in these bars.
Short On Time? Do This Instead Of Making Super Green Bars
From time to time, I don’t remember to make these bars and I really want to take a healthy snack. I’ll simply place some cashews and dates in a container and head out the door. When I want a snack, I eat a few nuts and have a date together. It reminds me of these bars. While I don’t have any additional powders this way, it is an easy-to-eat and no-mess snack.
