Vegan Mac & Cheese
Ingredients
- 1 Cup Cashews raw, unsalted
- 1 Sweet Potato medium
- ¼ Cup Nutritional Yeast
- ¼ Cup Onion diced
- 2 Cloves Garlic diced
- 2 Tablespoons Paprika
- 3 Servings Pasta Elbow, Penne or Shapes
- ¾ Cup Water
Optional
- 2 Tablespoons Your Super Plant Protein Mix
- 1 Teaspoon Your Super Golden Mellow Mix
Instructions
Prepare ingredients
- Cook pasta according to package directions.
- While the pasta cooks, make your potato – I prefer to oven roast.
Mix Ingredients
- Preheat oven to 350° if not already turned on from baking the potato.
- Remove skin from sweet potato, if desired, and transfer sweet potato to blender.
- To the blender add plant protein, cashews, nutritional yeast, water, onion, garlic & paprika.
- Blend until smooth, then mix pasta and sauce together and place in a baking pan that has been sprayed with non-stick spray.
- Bake pasta for 30 minutes.

- Add in mushrooms, bacon, or chicken for additional flavor.

Why I Love This Recipe
Unlike other vegan mac and cheese, my recipe includes optional super foods from Your Super! While these mixes are optional, they do add a boost of protein and flavor. It’s hard to find a mac & cheese that has almost 22 grams of protein without added meat. When I tried this recipe, I immediately fell in love, the taste was creamy, and I didn’t miss the cheese or the lethargy after eating!
I’ve posted Your Super recipes before, and I will continue to include recipes that utilize their mixes. The benefits of their products coupled with the minimal ingredients keeps me buying their products. My goal is to use the mixes in as many foods as possible (not just smoothies!). Not to mention, the color of this pasta comes from real ingredients, no yellow dyes here!
In addition to the sweet potato, adding paprika, golden mellow and nutritional yeast all contribute to the orange color of the cheese sauce. If you find the sauce to be a little too sweet, you can add a little pinch of cayenne pepper to balance out the sweetness.
What Pasta Is Best For Vegan Mac And Cheese?
When choosing a pasta for this recipe, I recommend either elbows, spirals, or a fun shape! You really want something that the sauce will stick to. Pastas like spaghetti or lasagna wouldn’t hold the cheese sauce, so I would stay away from those. As long as the pasta has some shape to it, it should work!
If you want to sneak in more veggies I would look for a colorful pasta that is colored from spinach or tomatoes. This is a great way to increase the nutritional value of this recipe without changing the taste.
