Instructions
 

  • Place all ingredients in food processor, and process until sticky.
    ½ Cup Cashews, Unsalted, ¼ Cup Sunflower Kernels, Unsalted, ¼ Cup Shredded Coconut, 2 teaspoons Your Super Forever Beautiful, 1 Cup Pitted Medjool Dates
  • Roll "dough" into bite-size snacks, and store in refrigerator.

Why I Love This Recipe

When I was feeling sluggish I thought how can I eat a better snack? Using a few ingredients I had on hand, I was able to create a snack that gives me natural energy I needed.

I grabbed my food processor, and got to work! One reason I love this recipe is how easy it is! The ease is in part due to the food processor. My processor has a “scraper” on it that allows me to scrape the sides as I process. You can try to make these in a high speed blender, but I found it hard to get the sticky “dough” out. It’s also important to note that you want to ensure your dates are soft. If your dates are hard, you risk breaking your food processor. If you find you have a hard dates, simply soak them in water for about 15 minutes. After 15 minutes, drain the water, and use the dates.

Why Eat A Better Snack?

If you have ever looked at the nutrition label of your snack bar, you may see some questionable ingredients, unless you are already eating a better bar. Things like soy protein isolate, high fructose corn syrup, glycerin, artificial flavors and red #40. I checked out a Special K Peanut Butter Protein bar and a Strawberry Nutri-grain bar as a reference for those ingredients.

Not to mention my recipe contains a Your Super mix which contains superfoods like chia seeds and maca which is an adaptogen which helps with stress. It also contains many other natural ingredients that are great for your to add to your diet. Given that these bites only contain 5 natural ingredients, you know exactly what you are putting into your body.

How Did I Get To Wanting A Better Snack?

A few years ago I found out I was sensitive to many foods, including high fructose corn syrup. As a result, my life changed and I had to read every nutrition label. I cut back most of my processed foods, and found Your Super products. In addition, Your Super taught me how to incorporate natural ingredients in my life and they have so many amazing recipes that taste delicious.

Now, I love experimenting with recipes in the kitchen, and trying to find natural / better recipes that I can feel good about eating too.
