If you love pumpkin as much as I do, you will love this muffin! My pumpkin muffin doesn't have any processed sugar added, so it can be enjoyed guilt-free.

Make Flax Egg

  • To the mixing bowl, you'll be using to make the dough add the water & flax seeds. Allow to sit for 10 minutes, this should set and be a little like a loose pudding after 10 minutes.
    2 Tablespoons Flax Seeds, 6 Tablespoons Water

Make The Dough

  • After the 10 minutes, turn oven to 350°F and prep your muffin tin by adding your silicone cupcake liners.
    2 Teaspoons Your Super Golden Mellow Mix, ½ Cup Canned Pumpkin, 1 Tablespoon Maple Syrup, 1½ Cups Oat Flour, ¼ Cup Golden Raisins, ¼ Teaspoon Cinnamon, ¼ Teaspoon Ground Nutmeg, ¼ Teaspoon Pumpkin Pie Spice
  • To the same bowl you made the flax egg in (assuming it's large enough), add the remaining ingredients. Stir well, the mixture should not be too dry or too wet.
  • Using a spoon, spoon the mixture into cupcake liners. I recommend filling to the brim and pushing down the mixture as these won't rise.
  • Bake for 40 minutes at 350°F, and enjoy on their own or with your favorite cream cheese on top!

  • If you don’t have oat flour on hand, you can make it yourself! Place old-fashioned oats in a food processor and process until a powder. Measure and use as needed. Any extra powder can be saved for future oat flour needs.
  • No Golden Mellow on hand? Add ½ Teaspoon of each spice instead.

Why I Love This Pumpkin Muffin Recipe

Right off the bat, I’d like to mention this pumpkin muffin recipe is healthy! With minimal ingredients and no processed sugar added, you can’t go wrong eating these muffins.

The pumpkin keeps this muffin not too dense and not too loose, either. Adding in the raisins surely helps with the moisture as well. To me, the raisins are an added treat inside these muffins. I really enjoy these, and they have truly become a kitchen staple in my house. Being able to grab and go a delicious healthful treat is essential for me to keep on track – these muffins provide that for me.
