  • Mix water to a boil.
    3 cups Water
  • Add in remaining ingredients, and stir. Cook for 20 minutes, mixture should be thick.
    1 cup Polenta, 3 tablespoons Miso Paste, 1 cup Green Chili
  • Let cool 5 minutes before putting into molds. Let cook completely, then put in the fridge for about an hour. After an hour, remove polenta from mold and use or store for later.

Why I Love This Recipe

When I wanted to make polenta, I decided to make Green Chili Polenta. The last time I bought a tube of polenta I remembered that I had previously made polenta at home. However, I just made it like grits – it was incredibly thick but I ate it. After opening the store bought polenta and seeing it wet (yuck) I knew I’d never buy a tube of polenta again.

Regardless of your stance on store bought tube polenta, I think everyone should try making polenta at least once. Polenta is customizable – try adding other peppers or even tomatoes to the pot while it cooks. It firms up so well that it can handle some additional add-ins. I truly love experimenting with polenta flavors.

Using only 4 ingredients, my green chili polenta is easy to make, and cheaper than buying premade from the store. Next I’ll share some of my favorite polenta add-ins.

Green Chili Polenta is made from corn meal similar to what is here. The beautiful yellow polenta contrasts against the green and blue pumpkins.

Add-ins For Homemade Green Chili Polenta

Although green chili polenta is great on it’s own, there’s times I like more or different flavors. I’ve experimented with the below add-ins and found them to be delightful.

  • Cheddar cheese
  • Top with salsa

On the other hand, if you are not ready for green chili polenta yet, I’ve included add-ins for basic polenta as well. As much as I’d like to try polenta for breakfast, I’m not there yet. Be that as it may, I’ll try it one day and will be sure to share my experience on my blog.
